Grilling Season is Here!


Make the perfect steak!

As the resident Dad around Macaroni Kid I often get the short end of the stick when it comes to events to check out in our mom-centric world. And I'm OK with that, especially when I get invited to events like the Walmart Choice Steak Challenge, Presented by Kingsford & Coca Cola.

I not only attended the event, but got to judge steaks prepared by top chefs from Steakhouses across the Country. And my vote would determine which charity would receive a $5,000 donation. The winner was Richard Chamberlain of Chamberlains Steak House in Dallas (his steak was my second favorite).

I love steak and this was a treat. The steaks prepared ranged from grilled Rib Eye with Everglades Rub (my favorite of the eight) to Coffee Rubbed Steak with Bleu Cheese (Bleu Cheese is for salads, not steak IMO).

Here's some video from the event, I'm pretty sure I sampled each steak at least twice!


And I picked up some tips along the way. First, was don't cut the steak to see if it's done, use pressure. Soft = rare, firm = well done. And when you take your steak off the grill allow them to rest before cutting, this will ensure the juices stay in (thanks Ronnie!).

Ronnie Killen's Grilled Rib eyes with Garlic Pepper Dry Rub

Makes Four servings
Prep Time 10 minutes
Cook Time 20 minutes

INGREDIENTS

Four 16-ounce Walmart Choice Premium Rib eye steaks
Dry Rub
1/4 cup plus 2 tablespoons garlic pepper
2 tablespoons coarse ground pepper
1 tablespoon chili powder
3 teaspoons granulated sugar
2 teaspoons kosher salt
1 teaspoon smoked paprika
1 teaspoon onion powder
1/2 teaspoon granulated garlic
1/2 teaspoon cumin
3 tablespoons Worcestershire sauce

INSTRUCTIONS

    Preheat the grill using Kingsford charcoal, until the briquets are consistently ashed over.
    While the grill is heating, mix all dry rub ingredients together and generously coat each steak.
    Moisten each steak with Worcestershire sauce before placing on the grill.
    Grill steaks to desired temperature (approximately five minutes, flipping once).

There's something about charcoal grilled steaks that gas grills just can't match. I like the tip about not cutting it open right away, makes sense.
