Eggland's Best Recipe Contest Winner

Last month we hosted an Eggland's Best recipe contest. The recipes have been tested and the winner has been chosen. Congrats to Jennifer Walters of Napervillle, IL. She submitted a recipe for Delicious Chocolate Banana Muffins. Jennifer wins $500, a 6-month supply of Eggland's Best Eggs and an Eggland's Best Prize Pack. 

Delicious Chocolate Banana Muffins

TOTAL TIME: Prep: 15 min. Cook: 20 min.
MAKES: 8 servings

Ingredients

    2-3/4 cups white whole wheat flour
    3/4 cup baking cocoa
    2 teaspoons baking soda
    1 teaspoon salt
    1 cup sunflower seed oil
    1 cup brown sugar, packed
    1 cup white sugar
    1/2 cup plain yogurt
    2 teaspoons vanilla extract
    4 Eggland's Best large eggs
    4 very ripe mashed bananas
    Topping: 1/4 cup brown sugar mixed with 1 teaspoon cinnamon

Directions
 
1. Preheat oven to 325 degrees F.
2. Combine flour, cocoa, baking soda, cinnamon, and salt. Set aside.
3. Mix oil, sugars, yogurt, and vanilla until smooth.
4. Beat in eggs until fluffy.
5. Add flour mixture alternately with bananas and mix until smooth.    
6. Sprinkle tops with brown sugar and cinnamon mixture.
7. Pour into greased muffin tins.
8. Bake for 18-20 minutes or until done.
